Coravin Sparkling

The system is made for bottles that have already been opened and popped. A stopper clamps onto the neck to create a seal rated to hold the bottle's internal pressure, and a separate charger sits on top of it, injecting pure CO2 into the headspace until a status indicator confirms the seal is charged. Because sparkling wine gets its bubbles from CO2 produced during fermentation, topping the headspace back up with the same gas is what keeps the mousse intact rather than flattening over successive pours.
It is designed only for bottles built to hold high pressure and should not be used on still wine, where the glass is not rated for it. Stored in the fridge with the stopper in place, a bottle stays fresh for at least four weeks, and each pour simply means removing the stopper, pouring, then resealing and recharging.
