About Yuzu Knives

Kitchen knives forged from AUS-10 steel, bought by home cooks setting up a first proper knife roll. The knives arrive handle-finished and ready to use, not blanks for a buyer to fit themselves.

The core line runs to a Gyuto chef's knife, a Nakiri for vegetable work, a Petty for paring, and a serrated Bread Knife, each with a Wa handle in ebony and sandalwood. A folding Higonokami pocket knife sits alongside them for jobs outside the kitchen. Knives are available singly or in a Three Knife Set (Gyuto, Nakiri, Petty) or Four Knife Set adding the Bread Knife.

For upkeep there's a dual-sided whetstone and wooden saya sheaths sized to each blade, sold individually or as saya bundles.

The blades are San-Mai construction: a high-carbon AUS-10 core from Tokai, Japan, sandwiched in a stainless outer layer, finished with a hammered Kurouchi coating that comes from the forging itself, not applied afterward. AUS-10 is pitched as the midpoint on the hardness scale, harder than ordinary stainless, tougher than VG-10 or blue paper steel, which is the trade-off the brand states outright on its own comparison chart.

Questions about Yuzu Knives

What is the Gyuto knife best used for?

The Gyuto is Yuzu Knives' all-purpose chef's knife, suited to slicing meat, mincing herbs and dicing onions. It has a sharp pointed tip for precision work and a long curved edge that allows a rocking cutting motion.

What is the Nakiri knife designed to do?

The Nakiri is a vegetable knife with a wide, flat blade built for a straight up-and-down chopping motion on vegetables such as onions, squash and carrots. The flat side of the blade can also scoop food off the board or smash garlic.

What steel do Yuzu Knives blades use and how hard is it?

The blades use a Japanese AUS-10 steel core rated HRC 58-60, wrapped in two layers of protective stainless steel in a San-Mai construction. This combination is designed to stay sharp for months between sharpenings.

How should I clean and care for my Yuzu Knives blade?

Yuzu Knives recommends washing the knives by hand in warm water and soap, since a dishwasher can permanently damage them. The dual-sided whetstone, with 1000 and 3000 grit sides, is sold to restore and polish the edge.

What is included in the Yuzu Knives Starter Kit?

The Starter Kit bundles one knife, a wooden Saya sheath to protect the blade, and a dual-sided whetstone with 1000 and 3000 grit sides to keep it sharp. The 1000 grit side restores a dull edge while the 3000 grit side polishes it to a razor finish.

How long does Yuzu Knives delivery take?

UK orders placed before 12pm are dispatched the same working day and typically arrive within 1-3 working days. EU orders take 3-6 working days and other international orders can take 6-12 working days depending on destination, and any import duties are the customer's responsibility.

How do I return a Yuzu Knives order?

Customers have 14 days from receiving a knife to cancel the order, after contacting Yuzu Knives for return instructions. The knife must be unused and sent back with its original box, since a used knife cannot be resold for hygiene reasons and no refund is given for it.

What does the Yuzu Knives 6-month warranty cover?

The warranty covers faults or damage occurring within six months of purchase through no fault of the customer, with a free repair or replacement offered. It does not cover damage from dishwasher use, being dropped, misuse as another tool, cutting frozen food or hard surfaces, or submersion in water.

Who pays return postage for a faulty Yuzu Knives order?

If the knife is faulty or the wrong item was sent, Yuzu Knives covers the return postage both ways. For any other return, such as a simple change of mind, the customer pays the postage cost.

Can I cancel a Yuzu Knives order after placing it?

An order can be cancelled through the customer account as long as it has not yet been fulfilled. Once an order has been fulfilled and shipped, it has to be handled as a return once it is received.
